You need to create a Highlight rule. Create a rule that says for example:
First, make sure that on your Ultraviner > Settings > Discord you have enabled "Magnetic serach links".
After that:
Go to Phone Settings > Apps > Default Apps > Choose default apps > Opening Links > Installed Apps > Amazon Shopping > disable the option: "Open supported links".
This will disable all amazon links from opening inside the app automatically.
Uninstalling Amazon Shopping app is the only known option.

Yes, there is an app for android called Choose Browser that let you define different default browser based on the URL domain. I am not aware of a similar app for iPhone.
Ultraviner settings are stored with the website cache, do not erase Amazon website cache or you will lose some of your settings. Also, make sure that you do not have your browser configured to erase all cache when closing the browser.
Browsers may disable your browser tab in case it is not actively being used. If you want Ultraviner to be always running you need to go into your browser Performance settings and add your amazon website inside "Always keep these sites active".
